- Sampling: meat sample only from the diaphragm (pillar)
- Sample container: Coded sample tubes with identification via assigned number range
- Assignment of the samples to the deliverer/farmer must be guaranteed
- Sample storage: immediate freezing and proper storage
- Sample accompanying data: Entry of sample accompanying data must be carried out before sending the samples
- Dispatch to the laboratory: regularly, maximum 14 days after sampling
